Many factors can affect whether a document is legally valid, but who drafted it is generally not one of them. A document does not need to be drafted by a lawyer to be legally valid. What matters is that the document meets the legal requirements that apply to that particular type of document, that the person signing it has the required legal capacity, and that any applicable signing, witnessing, or notarization requirements are properly followed.
In other words, an AI-drafted document can be legally valid in Ontario, just as a document drafted by the person themselves can be legally valid.
